MISSISSIPPI MUD CAKE

                                                                   


This was a very popular recipe from back in the 70's and 80's.   Recently I was feeling nostalgic and decided to make it.  Wow, it is very rich and extremely sweet!  Being totally honest, I would use a different chocolate buttercream icing than the one listed here.  It just tasted sweet and not chocolate-y enough.  The cake was eaten until it was gone though, so maybe I am not being fair.  If you want a taste of the 70's you might enjoy this cake!

1/3 c. cocoa
2 c. sugar
4 eggs
2 sticks butter, melted
1-1/2 c. flour
1 t. vanilla
1 c. coconut
1 c. nuts
1 jar marshmallow cream


Preheat oven to 350 degrees. Beat cocoa, sugar and eggs until thick. Add butter, flour and vanilla and mix well. Stir in coconut and nuts. Bake in 9X13 greased and floured pan for 30 minutes or until toothpick comes out clean. Cool. Spread marshmallow cream on top and then icing.

Icing:

1 stick butter, softened
6 t. milk
1/3 c. cocoa
1 box powdered sugar (approx. 4 c.)
1 t. vanilla
1 c. nuts

Beat all ingredients together with mixer except nuts until smooth. Stir in nuts and ice cake.
