1 box yellow cake mix
1 egg
1 stick butter, melted
1 – 2 c. chopped pecans, optional
8 oz. cream cheese, softened
1 lb. Powdered sugar (4 c.)
2 eggs
1 t. vanilla
1 c. coconut, optional
Preheat oven at 350 degrees. By hand mix thoroughly the cake mix, egg, butter, and pecans and press into a greased and floured jelly roll pan.
With mixer beat the cream cheese, powdered sugar, eggs and vanilla. If desired, stir in coconut. Pour over bottom layer and bake approximately 35-40 minutes, or until top begins to brown slightly. Cool and cut into squares.
· May also make a chocolate version using a chocolate cake mix instead of the yellow.
· May also bake in a 9X13 pan and increase the baking time to 45 to 50 minutes.
