GRASSHOPPER PIE
When Lauren was in elementary school I always made cupcakes in ice cream cones to send to school on her birthday. It became her request for her birthday dessert even as an adult -- until she had this pie. I hadn't made this frozen dessert in years, and she immediately decided this would be her new birthday dessert. My baby girl is all grown up! Yippee -- this is much easier to make!!
Crust:
1 c. chocolate wafer crumbs
¼ c. sugar
3 TB. butter, melted
Filling:
1 c. heavy whipping cream
2 TB milk
3-1/4 c. miniature marshmallows
2 TB white crème de cacao
¼ c. crème de menthe
1 pt. Vanilla ice cream, softened
Mix crust ingredients and press in pie plate.
Whip cream and chill. In top of double boiler combine milk and marshmallows. Heat over boiling water stirring till melted. Cool completely. Add crème de menthe and crème de cacao. Fold into whipped cream.
Line pie crust with ice cream then put creamed mixture on top. Freeze for 6 hours before serving. Store in freezer.
