FUDGY MINT CHEESECAKE BARS

4-1 oz. squares unsweetened baking chocolate
10 TB butter
2 c. sugar
4 eggs
2 t. vanilla
1 c. unsifted flour
1-8 oz. pkg. cream cheese, softened
1 TB cornstarch
1-14oz. can Eagle Brand Sweetened Condensed Milk
1 t. peppermint extract
Green food coloring, optional

Preheat oven to 350 degrees. Melt chocolate with ½ c. margarine. In bowl, combine chocolate mixture with sugar, 3 eggs, vanilla and flour. Spread in greased 13X9 baking pan. Bake 12 minutes. In mixer bowl, beat cream cheese, 2 TB butter and cornstarch until fluffy. Gradually beat in condensed milk then remaining ingredients. Pour over brownie layer. Bake 30 minutes or until set. Top with Glaze. Cool. Chill. Cut into bars.

Glaze:

Melt 1 c. (6 oz) semi-sweet chocolate chips with ½ c. whipping cream, unwhipped. Cook and stir until thickened.
