Electra always made this as a side dish when she served Beef Stroganoff. It complements any German flavored meal perfectly. When I make Roladen (one of Justin and Logan's favorite dishes) I always serve this along side it. In fact I sometimes mix the two together on my plate. If you are a cabbage lover like Logan and I are, you will love this easy side dish!
¼ onion, chopped
¼ c. hot water
½ lg. Head red cabbage, chopped fine
2 TB red wine vinegar
1 TB brown sugar
Salt, pepper, garlic to taste
In a skillet fry bacon; take it out and crumble. In remaining bacon grease sauté onion. Add water and bring to a boil. Add cabbage. Sprinkle vinegar, brown sugar and seasonings over all. Add crumbled bacon and stir. Put lid on and simmer about 10-15 minutes. Watch so it doesn’t get mushy or run out of water.
