I wanted something cool to go with the Tikka Masala so I
found this recipe on the Food Network website.
There is an Indian chef, Aarti Sequeira, who has quite a few recipes so
I decided to give this one a try. It was
a nice addition to the meal.
3 large ears corn
Olive oil
1 cup halved cherry or grape size tomatoes
1 or 2 sprigs fresh mint, leaves thinly sliced
Small handful fresh cilantro, leaves diced
Dressing:
¼ c. freshly squeezed lime juice
¼ t. ground cumin
1/8 t. cayenne pepper
Big pinch ground cardamom
Big pinch chaat masala (spice from Indian market)
Salt and freshly ground black pepper
Clean and silk the corn.
Rub it with olive oil and put on a grill over medium high heat. Cook until charred in patches all the way
around. Remove from heat and let
cool.
While it is cooling whisk together all the dressing
ingredients.
Slice the kernels off the cobs and tumble into a bowl. Add the tomatoes, mint and cilantro. Toss with the dressing and taste for
seasoning.
