CILANTRO MOUSSE

KK had this recipe at a ladies’ get-together and loved it, so she sent me the recipe.  I made it for her birthday party as a mid-afternoon snack while we were in the pool.  It is cool, light, and very tasty.  Smear some on a cracker and you will agree!

1 c. mayonnaise
1 med. Bunch cilantro, stems removed and chopped
3 TB cream
1/3 med. Onion, chopped
1 serrano chile pepper, seeded and chopped
1 t. chicken bouillon granules
2 pkg. unflavored gelatin, dissolved in ½ c. boiling water

Process the first 6 ingredients in a food processor until well blended.  Add gelatin and blend well.  Place in a well greased mold and chill until set.  (I didn’t have a mold so I lined a small bowl with saran and poured it into the saran.  Chill until set – several hours.  Unmold onto a serving platter and serve with crackers.  The original recipe recommended Saltine crackers, but I just used a variety of ones I love.
