At the farmer's market in Luling this weekend I found some really fresh okra and decided to make this dish. After all, who doesn't like fried okra and fried potatoes? Put them together with just a little cornmeal and you have a very tasty, version of fried okra without all that batter. I hadn't made this in ages, and my boys really enjoyed it to the last chunk of okra!
2 lbs. Fresh okra, washed and sliced into ½” pieces
2 lg. Russet potatoes, washed and diced into ½” pieces, unpeeled
1 med. White onion, diced into ½” pieces
½ c. cornmeal
Vegetable, canola or grapeseed oil for frying
Salt and pepper to taste
Combine okra, potatoes and white onion pieces in a large bowl. Sprinkle with cornmeal, salt and pepper. Heat oil (about 1/3” deep in pan) in cast iron skillet until hot, but not smoking … Gently spoon potato mixture into pan. Turn occasionally, until potatoes are done and mixture is nicely browned. Drain on paper towels and serve.
Variation: Add Tony Chachere’s Cajun seasoning or your favorite chile powder to the cornmeal mixture.
