JEANA’S THAI GRILLED BEEF SALAD


This was part of Jeana’s yummy Asian dinner. The lime flavor really jumped out and was especially yummy with the beef – two flavors that marry very well and that I hadn’t thought to put together before. Loved it Jeana!

5 TB fresh lime juice
2 TB fish sauce
½ t. brown sugar
2-3 small Thai or Serrano chiles, seeded and minced*
½ c. shallots or red onion, thinly sliced
4 scallions, diced
½ c. fresh cilantro, chopped
2 TB fresh mint, chopped
½ c. Thai basil, chopped, optional
1 cucumber, thinly sliced or diced
1 lb. lean steak, 1” thick (tenderloin, London broil, flank)
Salt and pepper to season steak
Mixed greens **

In bowl stir together the lime juice, fish sauce, sugar and chiles. Season steak and grill/broil it to medium rare. Transfer steak to a board and let rest. Cut across grain into thin slices. Toss the steak with the lime juice mixture and the rest of the ingredients. Serve over mixed greens.

*Be careful with these, they add a real kick!
**May also serve this dish over cooked sticky rice instead of greens.
