I made these as a healthier appetizer to go with our Asian dinner. I thought they were refreshing and gave the celery a little more flavor than usual. Next time I will add some Asian chili garlic paste to give it a bit of a kick.
1 bunch celery
1 scallion, finely minced
1 TB oyster sauce
2 t. soy sauce
½ t. Asian sesame oil
Trim celery, reserving leaves. Cut each stalk lengthwise in 1/8” strips and then cut in 2” pieces. Toss the celery leaves with the remaining ingredients until combined well. Chill.
