Okay, this is for my vegan kids who might want to try a vegetable smoothie for breakfast or as an afternoon snack. I got this recipe from my healthy friends in Colorado. It is one of those things that you don't go YUM, but it isn't bad tasting so if you are trying to be healthy you might want to try this. I think it would probably be better if it was made earlier and chilled. I just served it in chilled mugs but it still needed to be colder in my opinion. I made the basic recipe so it might be more enjoyable with some or all of the optional items. My boys at Bella Vista weren't too thrilled -- they thought it should be used as a dip with crackers!
3 cloves garlic
Juice of 1 lemon
3/4 c. water
1/2 c. olive oil
1 - 2" piece ginger, coarsely chopped
Salt
Dasy cayenne
Optional -- 2-4 leaves fresh basil, 1/4 c. fresh parsley, 1 cucumber
1 head organic Romaine lettuce, washed
Put all ingredients in a blender, adding the romaine in last one leaf at a time.
