KK’S LIME JELLO CONGEALED SALAD

Unfortunately my family doesn’t really like congealed salads, so I haven’t made this one in years, but if you like them it is really a good one. Now that they are all grown up I may just have to try it on them again – surely anyone who gets excited over Broccoli Slaw will like jello now!!

2 small pkg. lime jello
3 c. boiling water
Lg. can crushed pineapple
1-1/2 c. miniature marshmallows
3 bananas, cubed
1 c. pineapple juice
½ c. sugar
1-1/2 TB flour
1 egg, slightly beaten
½ pt whipped heavy cream or Cool Whip
Grated sharp cheddar cheese or pecans

Dissolve the jello in boiling water. Cool and add pineapple, marshmallows and bananas. Chill. Mix and cook slightly sugar, flour, egg and pineapple juice. Stir into the jello mixture. Chill until firm. Top with whipped cream and either cheese or pecans. Cut into squares to serve.
