OK, this is the one recipe everyone who has ever tried it asks me to give them. It is beyond easy and tastes fresh. You can’t beat it – When my kids were in high school I would have their friends show up late at night with a grocery bag with fresh tomatoes and ingredients asking me to make them some salsa. They were shocked that the tomatoes came in a can. I'm quite sure every one of their friends now uses their blender for more than margaritas!
½ med. Onion, chunked
1 clove garlic, chunked
½ - 1 fresh jalapeno, to taste
Handful of fresh cilantro
1 can diced tomatoes
1 can original Rotel diced tomatoes and green chiles
Juice of 1 lime
1 TB white vinegar
Salt to taste – a few shakes
In the above order put the ingredients in the blender. Turn it on until you see the fresh things in the bottom ground and mixed through to the top – My blender takes about 5 seconds – yes, 5 SECONDS.
Pour in a jar and refrigerate. It will keep about 2 weeks – if it lasts that long!
