JEFF DAVIS PIE

2 piecrusts*
4 eggs
1 c. whole milk
2 t. vanilla
2-2/3 c. sugar
1 rounded TB flour
1-1/2 sticks butter, melted

Preheat oven to 450 degrees. Put piecrusts in 2 pie plates.

Beat eggs; stir in milk and vanilla. Mix sugar with flour and stir into egg mixture. Stir in butter. Divide the mixture between the 2 piecrusts. Bake 10 minutes at 450 degrees. Reduce heat to 350 degrees and bake for 25-30 minutes, or until filling is firm. Chill.

*This recipe came from my mother’s cousin Winnie who was a fabulous baker. There were no Pillbsbury piecrusts in the refrigerator section to put into her pie plates, so this is the recipe she gave for making the 2 crusts to go with these pies.

1-1/2 c. flour
½ c. Crisco shortening
¼ c. hot water
½ t. salt
½ t. baking powder

Pour hot water on the Crisco. Mix well and add the dry ingredients. Roll out into 2 crusts.
