ERIC’S STRAWBERRY CAKE

This is the cake Eric always requests for his birthday, and since it uses a cake mix it is easy to make.  It is very moist with just the right amount of strawberry flavor.  Happy Birthday my LA boy!

1 pkg. white cake mix
3 t. flour
1 pkg. (3 oz.) strawberry jello dissolved in ½ c. water
4 eggs
1 c. canola oil
½ pkg. frozen strawberries in juice, thawed

Preheat oven to 350 degrees. In large mixing bowl on medium speed, mix all the ingredients together. (Be sure to get half the juice of the strawberries as well as the berries.) Bake in layer pans that have been greased and floured for about 40 minutes, or until cake springs back when lightly touched. You may also do this cake in a bundt pan, but the baking time should be increased to about an hour. Cool.

ICING:

1 stick butter, softened
1 lb. box powdered sugar
½ pkg. frozen strawberries in juice, thawed
Pecans, if desired

Using mixer, mix all ingredients until smooth. Stir in pecans if desired. If baked in a bundt pan, make a glaze to pour over the cake. Use the frozen strawberries and juice and mix enough powdered sugar to make a thinner consistency – probably about ½ of the box.

This is EVERYONE'S favorite cake! Not just mine. Sometimes I add a bar of cream cheese to the icing to make it more like birthday cake icing. So yum. -E
