SHRIMP SALSA

This is a perfect party dish -- it makes a lot and is always a crowd pleaser.  I even had a man ask me for this recipe one time when I took it to tailgate at a Longhorn football game.  I have served it many times when I am making Mexican flavored appetizers for a party.  If you really want to impress your guests, make your own tortilla chips to be served with this -- the recipe is in this section as well.

2 lbs. Boiled shrimp, peeled and deveined (I usually buy medium-size frozen shrimp that
are peeled – be sure there are no tails on them. Thaw before using.)
4 or 5 avocadoes, diced
8 small tomatoes, diced
½ c. chopped fresh cilantro
6 green onions, diced
2-4 fresh jalapeno chiles, seeded and finely diced
Juice of 2 limes
1 – 8 oz. container of red cocktail sauce (usually in the refrigerator section of the seafood
market)
Salt to taste

Combine all ingredients and stir well. Chill, covered until serving time. Serve with tortilla chips.
