Raspberry Vinaigrette
Put a little oil on the beets and then roast on a baking sheet for about 45 minutes to an hour (depending on size) at about 375 degrees. Peel them (wear gloves because they bleed and stain) once they’re cool and slice them. Slice up a raw fennel bulb and mix the beets with the fennel and mandarin oranges. Put a little raspberry vinaigrette over it all about an hour before serving and serve cold.
