ITALIAN SALSA

2 fresh tomatoes, seeded and diced (peeled if desired)
2-3 cloves of garlic or to taste, diced finely
Fresh basil, to taste (probably about 4-5 large leaves), chopped
Salt and pepper to taste
Extra virgin olive oil, to taste (probably about 2 TB)

Experiment with different amounts of the garlic, basil and olive oil to your taste. Serve with fresh bread – a bagette or ciabatta would be my first choice. It is also a good topping for cheese and crackers.
