GRANNY TRAVIS’ OVEN POTATOES

                              
Justin's Mom made these every time we had fried fish, and I frequently ate more of them than I did the fish.  They are perfect when cooking for a crowd and would be good as a side dish probably any time you want potatoes.  Once they are in the oven you can worry about the rest of the meal, which makes them an even better choice.  I promise men will really love them -- bacon, onions and potatoes -- of course they will!   Women not worried about the bacon will love them as well.  Easy, yet oh so enjoyable!

6 to 8 slices bacon, cut in 2” pieces
2 onions, cut in about 8 wedges each
4-5 Idaho potatoes, cut in about 8 wedges each
Salt & pepper to taste
Oregano, parsley flakes, crushed red pepper to taste

Preheat oven to 425 degrees. In large black skillet over medium heat cook 4 slices of bacon till it starts to shrivel. Put in onions, potatoes and seasonings and stir well, coating the vegetables with the bacon grease. Continue to cook on stove about 5 or 10 minutes. Stir well and lay the rest of the bacon on top. Bake in the oven 45 minutes to an hour, or until potatoes are tender, stirring every 15 minutes to keep the vegetables from sticking.
