This is constantly being made during the holidays. People generally think it is some sort of toffee and are so surprised to find it is made of crackers. The salty/sweet combination is fabulous, and the fact that it is so easy to prepare makes it even better. I used to make multiple batches of fudge, but since I found this recipe I usually only make fudge once. EVERYONE asks me for this recipe.
1 sleeve saltine crackers
1 c. butter
½ c. light brown sugar
12 oz. semi-sweet chocolate chips
1 c. chopped pecans
Preheat oven to 350 degrees. Place crackers in one layer on parchment-lined baking sheet with sides. Melt butter and brown sugar in medium saucepan. Cook for 3 minutes, stirring constantly. Pour butter-sugar mixture over the crackers. Spread evenly. Bake for 15 minutes. Remove from oven and sprinkle with chocolate chips. When they start to melt, spread evenly over entire layer of crackers. Sprinkle chopped pecans on top. Refrigerate 1 hour. Remove from refrigerator and crack into pieces.
