Ok, it was the Super Bowl, so I had to make something the guys would like in front of them during the game, and every single time Justin and I go to a high school football game he walks into the stadium and immediately buys a frito pie! In the January issue of Food Network Magazine there was a pull-out of recipes for 50 different flavored popcorns. When I saw the frito pie one, I knew I had a winner. To say it is fantastic doesn’t begin to give it enough credit. If I wasn’t jumping back on the South Beach diet today I would be making this again tonight – loved, loved, loved it – oh, and the guys did too!!
12 cups popcorn (I used microwave popcorn, but popping your
own would be great too.)
4 c. Fritos6 TB melted butter
2 TB chili powder
2 c. shredded cheddar cheese
2 green onions, chopped
Preheat oven to 350 degrees.
Get out a large cookie sheet with sides.
Put the popcorn and Fritos in a large bowl. Stir the chili powder into the melted butter
and drizzle over the popcorn; toss until all the popcorn is well coated. At first I tried to do this directly on the
cookie sheet but it was impossible to get all the popcorn coated, so it is best
to toss it in a bowl. Dump the
popcorn/Frito mixture onto the ungreased cookie sheet. Sprinkle with the cheddar cheese and green
onions and toss it a bit more, spreading it out into an even layer. Bake in the oven until the cheese is
completely melted – should only be about 5 minutes, but I forgot it and it was
probably in there about 10 and was still fine.
