MARGARITA SQUARES





We went to Kenzie and Zeke’s Cinco de Mayo party last night, and I took these.  They are like a jello shot except in a square.  You could easily pour them into jello shot cups if you wish.  Easy, yummy and of course a hit—

2 – ¼ oz. packets of unflavored gelatin powder
½ c. cold tequila
2-1/2 c. bottled margarita mix (I used Cedar Door Mexican Martini mix.)
Drop of green food coloring (if your margarita mix isn’t green)

In a bowl sprinkle the gelatin over the tequila and set aside.  Bring the margarita mix to a boil; pour it over the tequila-gelatin mixture and stir until the gelatin dissolves.  Pour into an 8” square pan* and refrigerate until set, about 3 hours.  Cut into small cubes and lightly sprinkle with flakey sea salt or margarita salt right before serving.

*I doubled the recipe and put it in a 9x13 casserole dish.  It made about 24 good-sized squares.
