ELECTRA’S FRITO CORN SALAD

Electra brought this to the 4th of July celebration last night.  I embarrassed myself and had 3 servings of it – hardly ate the half hamburger I had made for myself.  All I wanted was this salad!   C’mon – Fritoes, corn, cheese – what’s not to like?

2 – 15 oz. cans whole kernel corn, drained
2 c. grated cheddar cheese
1 c. mayonnaise
1 c. red bell pepper, finely diced
½ c. red onion, finely diced
1 – 10-1/2 bag chile cheese Fritos corn chips, coarsely crushed

Mix all ingredients together except the Fritoes and chill for several hours or overnight. Stir in the Fritoes just before serving.  It makes more than you would think so you might stir half of the chips in half of the salad at first.  The corn will still be good the next day and you can stir the rest of the chips into the last half of salad -- unless you have Frito lovers like me -- then you might eat it all the first night!
