I tend to get in a rut with vegetables, either steaming or sauteing them. I saw this recipe in a "light" magazine so I tried them. They are quick, tasty, and also very low-cal. I will make them even when we are not dieting.
1 lb. fresh green beans
6 smashed garlic cloves
¼ c. water
1 TB olive oil
2 t. whole-grain mustard
Salt and pepper to taste
Preheat
oven to 450 degrees. Toss beans on a baking sheet with the garlic,
water, and olive oil. Roast about 20
minutes, or until the beans are tender and slightly charred. Toss with the mustard, salt and pepper.
