1-1/2 oz. Silver tequila
3/4 oz. lime juice
1/2 oz. peach schnapps
1 oz. peach puree
3/4 oz. ginger simple syrup (recipe follows)
2 peaches, sliced
Ice
Champagne
GINGER SIMPLE SYRUP:
1 c. sugar
1 c. water
1 lg. piece of fresh ginger, peeled and sliced into thin rounds
To make the simple syrup bring the sugar and water to a boil in a saucepan over medium-high heat, until the sugar dissolves. Add the ginger and bring to a simmer. Remove from the heat and let steep for 1 hour. Pour syrup through a sieve into an airtight container and discard ginger. Keep refrigerated.
To make the margarita all the ingredients except the peach slices and champagne to a shaker with ice. Shake well and pour into a chilled salt-rimmed glass. Add a splash of champagne to the top of the margarita and serve with a slice of peach. Makes 1 margarita.
To make a frozen margarita puree all of the ingredients except the champagne and peach slice in a blender with ice. Serve with a splash of champagne and a peach slice garnish.
