SUE’S SOPAPILLA CHEESECAKE

It is hard to decide which category to list this.  Sue was one of my college roommates, and I can always depend on her for a great sweet treat.  We were in Dallas moving Lauren and she offered to feed us while we were there.  She served this for dessert, but it makes a large pan so she sent leftovers home with us.  We ate it for breakfast -- yes, it was a little rich for breakfast but it would be perfect for the sweet dish for brunch.  Justin, Lauren, and I literally moaned every time we took a bite.  It is just that delicious!

3 cans crescent rolls
1 stick butter, melted
3 – 8 oz. pkgs. cream cheese
1-1/2 t. vanilla
2-1/2 c. sugar
1 t. Cinnamon or as desired

Spray a 9x13 pan with Pam. Preheat oven to 350 degrees. Beat together the cream cheese, vanilla and 1-1/2 cups of sugar. In a separate bowl combine cinnamon and 1 cup of sugar. Separate one can of crescent rolls and spread the pieces in the bottom of the pan. Spread half of the cream cheese mixture over the dough. Top with the second can of crescent rolls. Pour ½ of the melted butter over the layer of dough. Pour ½ of the cinnamon sugar mixture over the melted butter. Top with the remaining cream cheese mixture and third can of rolls. Pour the remaining butter over the dough and sprinkle with the remaining cinnamon sugar mixture. Bake for 40-50 minutes. Let cool before serving.
