This salad goes well with the German dish Roladen, and the creaminess of this salad compliments the brown gravy in the Roladen perfectly. I have never served it on it’s own, but it would be great served with just about anything.
2-3 c. heavy cream
Juice of 1 lemon
1 TB sugar
Salt, pepper, garlic salt to taste
Couple dashes of red wine vinegar
Finely chopped red onions
2 hothouse cucumbers (the ones wrapped in cellophane), peeled and sliced
Stir the cream, lemon juice, sugar, seasonings and vinegar together to make the dressing. Layer the onions and cucumbers in a bowl and pour the dressing over them. Gently stir to cover the veggies. Cover the dish and chill a few hours or overnight before serving. Store any leftovers in the refrigerator.
