CHUNKY CHICKEN SALAD WITH GRAPES AND PECANS

                                 
Lauren and I love chicken salad! I have more than one recipe for it, and this one mimics one Aunt Clara made years ago. Central Market does a similar version as well. The grapes add an amazing juiciness to it, and the crunchy celery – oh my gosh. Eat it on mixed greens or on some really good bread – or use Frito Scoops and scoop yourself up a bite – Guilty pleasure!!

XL rotisserie chicken, boned, skinned, and cut into ½” chunks*
3 stalks celery, sliced lengthwise and then finely diced
1 lb. red or black seedless grapes, sliced in half
1 c. salted, toasted pecans, finely diced
Handful of fresh parsley, chopped
1-1/2 c. Hellmann’s mayo (or to taste)
1 t. season salt
Freshly ground black pepper

Stir all ingredients together, adding mayo a little at a time, until you get the flavor you prefer. Chill before serving.

*Costco does bigger chickens than most grocery stores, so adjust your mayo if you don’t buy an XL chicken*
