My mama made this dip almost every time we had a party in the wintertime. One time I specifically remember her making it was for a Halloween party we had when I was a Freshman in high school -- yes that would have been about 1966 -- yikes! We had an old house on one of our properties out in the country, and we had a hay ride to that house (two tractors and trailers full of kids). She and another Mom had set up a haunted house, complete with a coffin with someone in it and gooey things for us to touch in the dark. They even had a lady dressed up as a gypsy telling fortunes. It was truly a memorable event. Of course I also remember the food -- and this was the first time I remember her making this dip. Not many people made dips back in those days so this just added extra zing to our spectacular shindig.
1 can refried or pinto beans
1 can Ranch Style beans
2 pickled jalapeno peppers, finely diced
1 TB. or more jalapeno juice
1 stick butter
½ lb. grated cheese, Velveeta or cheddar or ¼ lb. of each
1 medium onion, finely diced
1 clove garlic, finely diced
Mash beans together. Add the rest of the ingredients and heat in a double boiler until the cheese is melted.
Serve with tortilla chips or Fritos.
