This recipe was so popular back in the 70’s and 80’s. I guess it came out about the same time broccoli and rice casserole came out – in fact these are the only two recipes I ever rememeber having broccoli served. If you are a lucky one whose digestive system can handle raw broccoli, this is a recipe you should try! I will have to blanch the broccoli first when I make it :-(
2 bunches of raw broccoli
1 medium onion, finely diced
½ c. raisins
10-12 strips bacon, cooked crisp and crumbled
1 c. mayonnaise
2 TB sugar
2 TB white vinegar
Cut flowerets off broccoli and cut into bite-size pieces. Use the stems for another recipe or discard. Toss together the broccoli, onion, raisins, and bacon. Mix the mayo, sugar and vinegar together and stir into the salad. Refrigerate it several hours or overnight before serving. It keeps in the frig several days.
