My neighbor Patsy brought these to a party one time and gave me the recipe. To this day she swears she had never heard of this recipe, but I have the handwritten paper to prove it! Anyway, it is perfect to go with an antipasto-type appetizer. If you are in a hurry, you can buy any of the cheese you find already cut in cubes. The ones below are a nice mix if you decide you want to cube them yourself.
½ c. olive oil
½ c. white wine vinegar
3 TB chopped fresh parsley
3 TB minced green onion
1 t. sugar
¾ t. dried basil
½ t. salt
½ t. pepper
3 cloves minced garlic
1 – 2 oz. jar diced pimentos, drained
8 oz. sharp cheddar, cut in cubes
8 oz. Monterrey Jack cheese, cut in cubes
8 oz. Gouda cheese, cut in cubes
Mix all the marinade ingredients together and pour over the pimentos and cheeses. Marinate at least 8 hours before serving.
