ELECTRA’S PUMPKIN BREAD

Electra has some incredible recipes she has had for years.  This pumpkin bread is so moist and flavorful.  If you have a pumpkin-lover you have to make this for them.  It is yummy beyond words!

3-1/2 c. flour
3 c. sugar
1 t. Cinnamon
1 t. Nutmeg
1 t. Ginger
1 t. Alspice
1-1/2 t. salt
2 t. baking soda
1 c. oil
4 eggs
5/8 c. water
1-16 oz. can pumpkin
1 c. chopped walnuts, optional

Preheat oven to 350 degrees.  Grease and flour two loaf pans.

Combine all dry ingredients. Make a well in the center and add all liquids; slowly stir until mixed well. Stir in pumpkin and walnuts.

Pour into 2 loaf pans and bake for approximately 1 hr and 10 minutes, or until toothpick comes out clean.*

* Recently I have been using 3 slightly smaller pans (4-1/2"X8'1/2") as opposed to the large ones that are 5-1/2X9-1/2) and I check the bread at 45 minutes with a toothpick.  If it comes out clean it is done.  If not I check it every 5 minutes or so until it is done.   By doing this I have an extra loaf or two to give away or freeze for later.
