BRINE FOR TURKEY

Basic recipe:

7 lb. turkey
1 c. salt
1 c. brown sugar
1 gallon water

Add any or all:

2-3 oranges, juice only
3-4 lemons, juice only
1 chopped onion
3 cinnamon sticks
cloves
brandy

The turkey should sit in the brine for about 1 hour per pound of turkey. Brining too long is worse than not brining at all. Bake the turkey covered at 350 degrees for about 1-1/2 hours.
