BANANA CAKE

2/3 c. Crisco shortening
1-2/3 c. sugar
2-1/2 c. flour
1-1/2 t. baking powder
1 t. salt
1-1/2 c. mashed bananas (about 3 bananas0
2/3 c. buttermilk
1 t. soda
½ c. chopped pecans
3 eggs

Preheat oven at 350 degrees. Cream shortening and sugar together. Add soda to the buttermilk. Sift the rest of the dry ingredients together. Alternate mixing in the dry and wet ingredients. Beat the eggs separately; add them to the batter. Pour into greased and floured layer pans and bake for approximately 40 minutes, or until toothpick comes out clean. (If you choose to bake it in a sheet cake, adjust baking time.)

ICING

1 stick butter, softened
8 oz. pkg. cream cheese, softened
1 lb. box of powdered sugar
1 t. vanilla
1 c. nuts, optional

Beat the butter and cream cheese together. Add powdered sugar and vanilla and beat until fluffy. If desired stir in nuts.
