BABY BACK RIBS

Nothing says summer like ribs on the grill!  I have experimented for years, but this is the way I always end up making them.  I have never had any complaints when I serve them.  Just be sure you check the label to see that they are baby back ribs.  I accidentally bought St. Louis ribs one time and will never, ever, ever do that again.

1 rack pork baby back ribs (NOT St. Louis ribs that look very similar but are tough and fatty)
Rudy’s Rub or Chupacabra Rub (HEB sells it)
BBQ sauce (such as Rudy’s Sissy Sauce or Austin’s Own BBQ sauce)

Rinse ribs. Heavily season both sides of ribs with the rub. Put on gas grill, bone side down @ approximately 375-400 degrees. Close lid of grill and leave on approximately 15 minutes, or until that side is seared or browned. Turn over on other side and leave until that side begins to brown. Watch it carefully because there is more fat on this side and it can flare up.  Take off grill. Brush on BBQ sauce sparingly and wrap in heavy duty foil.  Turn the heat down on the grill to 300 degrees and move the ribs to the side of grill where there is no direct heat or put them in the oven at 300 degrees for about an hour.

When ready to serve, slice ribs and serve with BBQ sauce if desired.
