WILTED LETTUCE


This dish was popular back in the 70's, and my mom made it occasionally, because my picky dad actually liked it.  Honestly he probably ate anything with bacon, so this was a way for her to do something a little more interesting than an iceberg lettuce and tomato salad with mayo as the dressing -- can you blame her for wanting to trying something new?!!  Anyway I was nostalgic and made this, and while it isn't actually pretty it is very tasty.  Update:  I made this as the salad for our Valentine steak dinner, and I could have eaten it all myself.  This recipe only makes about two servings, so use more lettuce if you are having more people.  I wilted the lettuce a little longer than in this picture this time, and it was scrumptious!

6 slices bacon, diced in 1” pieces
1 small onion, diced
¼ c. white vinegar
½ c. water
4 TB sugar
4 c. leaf lettuce
Salt and pepper to taste

In skillet cook bacon until crisp; remove bacon and leave grease in pan. Saute onion until soft. Add vinegar, water and sugar and bring to boil. Add bacon and lettuce just until it wilts, then take off heat. Pour off excess liquid and season with salt and pepper. Serve immediately.
