1 gallon water
½ c. salt
½ c. brown sugar
1 t. garlic powder
1 t. onion powder
½ t. black pepper
2 Bay leaves (remove before marinating)
Bring to a boil and simmer for 5 minutes. Let cool. Marinate fish filets 4-12 hours. Set out of marinade for 1 hour before smoking. Smoke at 200 degrees on greased racks about 2 hours, depending on the size of the filets. We have an electric smoker that has a water bowl in the bottom of it. Fill it with:
1 c. dry white wine
1 TB dried parsley
1 lemon, cut in wedges
Heavy sprinkle of cayenne pepper
